This review summarises 25 years of investigations on antioxidants research in foods and biological fluids and critically analyses the merits and limitations of using the total antioxidant capacity (TAC) measurement in the metabolomic era. An enormous bulk of knowledge was produced regarding the antioxidant capacity of foods and large TAC databases were developed. A direct link between a food TAC value and any health benefit is erroneous and has led to several cases of consumer deception. However, the striking epidemiological evidence associating a high dietary TAC with some disease prevention and the availability of well-constructed TAC databases deserve attention and must be taken into account to establish the usefulness of measuring TAC in both foods and biological samples. The in vivo TAC measurement, usually performed in plasma, is influenced by many external factors, such as dietary habits, as well as environmental and behavioural factors, which are integrated towards homeostatic control by fine physiological mechanisms with high inter-individual variability. Therefore, plasma TAC cannot be considered as a unique biomarker of individual antioxidant status. However, the combined evaluation of plasma TAC with known markers of disease, individual metabolism, inflammation and genetics, as well as with markers of gut microbiota composition and activity, may lead to the identification of populations that are more responsive to food/diet TAC. In this framework, the appropriate use of TAC measurement both in food and in vivo can still provide support for the interpretation of complex phenomena and be a tool for sample screening when making a quick decision toward in-depth research investigations. © 2018 Society of Chemical Industry 相似文献

Vitamin D lost its functionality during processing and storage, thus, encapsulation with proteins is desirable to preserve bioactivity. The aim of the current study was to develop encapsulated vitamin D fortified mayonnaise (VDFM) using whey protein isolates (WPI) and soy protein isolates (SPI) as encapsulating materials in three different formulations, that is, 10% WPI, 10% SPI, and 5/5% WPI/SPI. Increased shear stress decreased the apparent viscosity along with significant effects on the loss modulus of VDFM. WPI encapsulates showed better results as compared to SPI. WPI based VDFM (M1) depicted the best results in terms of size and dispersion uniformity of oil droplets. Hue angle and total change differed significantly among treatments. The highest value for overall acceptability was acquired by M3 (5:5%WPI:SPI-encapsulates) thus proceed for in vivo trials. Serum vitamin D level was significantly higher in the encapsulated VDFM rat group (58.14 ± 6.29 nmol/L) than the control (37.80 ± 4.98 nmol/L). The Pechini-type sol-gel (PSG) process has been used for the preparation of doped oxides due to its capability to overcome most of the difficulties that frequently occur by using other producing methods. In this work we analyze the case of samples of pure and In-doped yttria (Y2O3) prepared by the PSG process. We experimentally characterize the synthesized samples by x-ray diffraction, micro-Raman spectroscopy, electrochemical impedance spectroscopy (EIS), and time-differential perturbed γ-γ angular correlation (PAC) spectroscopy, and we compare these results with those obtained starting from commercial oxide powders. We found that the PSG process can be used to successfully produce doped yttria in the cubic phase, with the impurities substitutionally located at the cationic sites of the structure. By the proposed PSG route, the inclusion of impurities does not affect the particle size nor the resistivity. However, when we compare the PSG samples with other samples produced from commercial powder, we found that the first have lower resistivities at grain interiors. On the other hand, PAC spectroscopy in 111In(→111Cd)-doped yttria allows the study of the dynamic hyperfine interactions observed by the radioactive 111Cd impurity-probe, which can be used to “sense” the host electron availability near the impurities after the electron-capture decay of 111In. Differences between PAC spectra for PSG samples and the commercial powder suggest that the PSG process introduces additional donor defects into the yttria electronic structure, which is consistent with the lower resistivity observed in the PSG samples by EIS spectroscopy. 相似文献
